Roasting Process
Coffee roasting begins with the careful selection of high-quality green coffee beans. The green coffee beans are loaded into the roasting drum. As the drum rotates, hot air circulates around the beans, initiating the roasting process.
Initially, the beans undergo a drying phase, where the moisture content inside the beans evaporates. As the roasting progresses, the beans reach a point called the "first crack." This is an audible cracking sound caused by the expansion of the beans as they release moisture and gases.
Once the desired roast level is reached, the roasted beans are quickly cooled to halt the roasting process. This step is crucial for preserving the flavours and preventing over-roasting.
Finally, the roasted beans are allowed to rest for a period, typically 24 to 48 hours, to allow the flavours to fully develop and stabilise.
